Only one pan is used as a cooking device on an open fire or a tandoor (charcoal clay stove). The tandoor is the all -purpose furnace of the Indians. This universal device is usually cross -shaped and has a cavity lined with a firm clay, on the floor of which firewood is inflamed. On top of that you can place a pan or a saucepan. The tandoor can also be used as an oven. We glued the plate -shaped NAN (flatbread) to the outer walls heated by the embers and baked there, which only takes a few minutes. NAN is not only an addition to the "Curries", but it also replaces cutlery. The Indian picks up his food with nan pieces and also spoons the sauce. Finally, some comments on the Indian "Curry". The word "curry" is a phonetic misinterpretation brought to Europe by the British. The Tamil word "kari" (tunke) is said to have been the origin for this name. The word is often used synonymously for all Indian dishes, sometimes for dishes that are prepared with a typical sauce. Sometimes but only for the "curry spice" known from us. However, there is no "curry spice" in India. Rather, this is a compilation of different spices, which - each individually coordinated - always tastes different. Every housewife, each cook, uses her own typical curry spice mix, the composition of which is guarded like a secret. Dieses Universalgerät ist meist kreuzförmig und verfügt über einen mit festem Lehm ausgekleideten Hohlraum, auf dessen Boden Brennholz entzündet wird. Darauf können Sie eine Pfanne oder einen Topf stellen. Der Tandoor kann auch als Ofen genutzt werden. Wir haben das plattenförmige NAN (Fladenbrot) an die durch die Glut erhitzten Außenwände geklebt und dort gebacken, was nur wenige Minuten dauert. NAN ist nicht nur eine Ergänzung zu den „Curries“, sondern ersetzt auch Besteck. Der Inder nimmt sein Essen mit Nan-Stückchen auf und löffelt auch die Soße. Abschließend noch einige Anmerkungen zum indischen „Curry“. Das Wort „Curry“ ist eine phonetische Fehlinterpretation, die von den Briten nach Europa gebracht wurde. Das tamilische Wort „kari“ (Tunke) soll der Ursprung dieses Namens gewesen sein. Das Wort wird oft synonym für alle indischen Gerichte verwendet, manchmal auch für Gerichte, die mit einer typischen Soße zubereitet werden. Manchmal aber nur für das von uns bekannte „Curry-Gewürz“. Allerdings gibt es in Indien kein „Curry-Gewürz“. Vielmehr handelt es sich hier um eine Zusammenstellung verschiedener Gewürze, die – jeweils individuell abgestimmt – immer anders schmecken. Jede Hausfrau, jeder Koch verwendet ihre eigene typische Curry-Gewürzmischung, deren Zusammensetzung wie ein Geheimnis gehütet wird. Wir wünschen Ihnen einen guten Appetit.
